Crème de la Cocoa‘s Nils Rowland is the King of Cake in Northeast Florida. Whipping up the most delicious desserts, he is sure to bake the cake of your dreams. We collaborated with him in our Winter 2016 issue of The Celebration Society (go snag a copy to see) and the cake looked absolutely stunning. Read below to learn more about his business and tips for picking out your own cake!
Tell us about your company and how you got started. Crème de la Cocoa is a confections company that serves desserts, chocolates and cakes to locals and for brides in the Northeast Florida area. We also design desserts for some of the areas best restaurants. My wife, Bailey, and I both studied hospitality management and, while I decided to go to Pastry School after graduating, Bailey doubled in marketing. After finishing school, we both worked in private clubs and resorts developing our skills. The goal we had always talked about was opening our own shop and that opportunity came along in summer 2015. With the support of our family and friends, we decided to take the leap and start on our dream, that is when Crème de la Cocoa became a reality.
When did you begin baking? The first time that I can remember I actually made something from scratch was with my dad, I was about 11. My dad has an affinity for lemon curd so we used to make lemon meringue pies.We would make the crust, then the curd, and then my favorite part the meringue. Making the different peaks, swoops, and designs watching them brown was one of the best parts. I think that this is one of the reasons lemon is one of my favorite flavor, reminds me of my dad.
What is your favorite cake and frosting combination? Favorite cake and frosting combo is a loaded question, I would say my favorite cake/dessert that I make right now is the “Pick me Up”, a tiramisu that has candied hazelnuts and chocolate curls giving it an amazing crunch.
Do you have any advice for couples picking out their wedding cake? My one word of advise is get what you guys want. The most important part is that it taste amazing, pick the flavors that you want, it is your wedding. The cake is the last thing that everyone eats so it is important that it tastes the best. If the food is great at the wedding it is normally a great wedding.
Describe the most exciting cake you’ve ever baked. To be honest it was probably my wedding cake, which wasn’t fancy we did more of a dessert gallery with a variety of different desserts. It was a lot of fun to make something really special for everyone that is special to us, especially because it was all of our favorites.
What are your favorite wedding cake trends at the moment? I like that a lot of cakes I see have a little more artistry to the, whether it is hand painting or custom sugar work. I think people can find a cake that really fits them these days.
Do you only bake cakes, or do you offer other wedding desserts? We offer a wide range of dessert options for weddings, from wedding cakes, plated desserts, dessert bars, and more. We want to give the bride and groom exactly what they want and try to customize it for them.
With gluten free and vegan desserts on the rise, do you offer these options to couples? I do offer a few different selections that are gluten free and vegan.
